Cress(Lepidium sativum) belongs to the crucifers (Brassicaceae). This sprouting vegetable can be sown year-round starting in March both indoors and in a sheltered spot in open ground. Harvesting can be done after only 14 days when the sprigs are 5 cm high.
Cress is not a vegetable to pick: once cut, the sprigs do not grow back.
Cress can also be grown as a sprout vegetable: a layer of potting soil or a few layers of kitchen paper is placed in a dish or container and the seeds are sprinkled on top. After that, give them some water. After a few days the seeds germinate and after a few more days the stalks are a few cm tall: time to harvest. You do this by cutting off the sprouts just above the ground or pulling them out of the ground with roots. Then cut off the roots.
